Deep Fry Butterfly Prawns

INGREDIENTS

2 tablespoons

2 teaspoons

1 clove

1/2 teaspoon

1/2 cup

 

large prawns

light soy sauce

chinese wine or dry sherry

garlic, crushed

ginger, finely grated

egg, beaten

peanut oil

salt to taste

breadcrumbs for coating

 

 

METHOD
  • In a small bowl, beat egg with a little light soy sauce.
  • Clean, shell and de-vein prawns, leaving the tails on. Slit prawns along curve on back.
  • In a bowl, mix wine, soy sauce, garlic, salt and ginger. Set a side and marinate for 30 minutes.
  • Dip the whole prawns into corn flour, then dip into beaten eggs and then breadcrumbs and mixed evenly.
  • Heat peanut oil into frying pan and deep fry prawns until golden brown until prawns turn golden brown.
  • Drain excessive oil and serve hot with chili sauce or mayonnaise.
