large prawns
light soy sauce
chinese wine or dry sherry
garlic, crushed
ginger, finely grated
egg, beaten
peanut oil
salt to taste
breadcrumbs for coating

METHOD |
- In a small bowl, beat egg with a
little light soy sauce.
- Clean, shell and de-vein prawns,
leaving the tails on. Slit prawns along curve on back.
- In a bowl, mix wine, soy sauce,
garlic, salt and ginger. Set a side and marinate for 30 minutes.
- Dip the whole prawns into corn
flour, then dip into beaten eggs and then breadcrumbs and mixed
evenly.
- Heat peanut oil into frying pan
and deep fry prawns until golden brown until prawns turn golden
brown.
- Drain excessive oil and serve
hot with chili sauce or mayonnaise.
