The various cuisine of ASIA have much in common, particularly where geography and religion is concern. The two main influence on diet are similar, but there are also unique traits, between and within each country. Asia have a range of culinary delights that can be simple, complex, delicious, fiery, mild, tantalizing and compulsive. Many of the ingredients are also familiar to anyone who knows their way around an average kitchen. The main differences have arisen just as they have risen in other parts of the world - through the use of available ingredients. Thus there is a reliance on some herbs and spices less known in the West such as ginger and cardamom, there are the nutritious by products of the soy bean, the protein rich fish sauces and shrimp pastes.

Most Asian Food is healthy food. The  Chinese food, especially steamed and stir fried dishes, it is possible to reduce weight and cholesterol count. A Japanese diet, is a guarantee against heart disease. Even the spiced food of India and Pakistan is beneficial. Many of the spices and ingredients such as garlic and ginger have been proved to have health giving properties.

For those who are coming to Asian cooking for the first time, or whose previous experience with Asian food has been limited, I have taken care to ensure that the essential steps have been made clear and precise.
