Stir Fried Baby Clam

INGREDIENTS

baby clams

sweet basil

fresh ginger

red chili, finely slice

light soy sauce

chinese cooking wine

fish sauce

sugar

vegetable oil

 

METHOD
  • Wash and sock baby clams in salt water to get rid the mud and sand. Wash the sweet basil, chopped ginger and red chili.

  • In a wok, heat 2 tablespoons of vegetable oil and stir fry ginger and red chili until fragrant. Add baby clam and stir fry until baby clams open up the shell.

  • Add soy sauce, chinese cooking wine and sugar and water and simmer for 1 minute and add sweet basil.

  • Dish out and put in serving plate and serve hot with white rice.
