GARAM MASALA
Garam masala, is a classic
mixture of ground spices, added to many Indian dishes. It is often
added with other spices at the frying stage, and also during the
last moments of cooking. If stored airtight in a dark and cool
place, garam masala will stay fresh for up to six months. |

GHEE The most common types of cooking fat used in India. It is prepared simmer slowly so that the milk solids settle to the bottom of the pan. It continues to simmer until most of the excess moisture is removed from the butter and the milk solids begin to brown, providing a nutty flavor. |
