Dry Beef Curry In Coconut Milk -  Daging Rendang

peanut oil

cinnamon

cloves

garlic

fresh ginger, chopped

ground coriander

ground cummin

ground black pepper

chili powder

ground fennel

desiccated coconut, toasted

coconut milk

salt

tamarind liquid

thick coconut milk

 

METHOD
  • Cut beef into large cubes. Finely slice one onion and set aside. Roughly chop the other onion and put into container of electric blender and add in garlic and ginger. Add 2 tablespoons of coconut milk  and blend to a smooth puree.

  • Put meat in a bowl and mix well with ground ingredients and set aside.

  • Heat frying pan over medium heat and add vegetable oil. Fry sliced onion and whole spices, stirring occasionally until onion is soft and starts to turn golden.
  • Add beef and brown evenly. Add ground spices, coconut, thin coconut milk and salt. Bring it to boil and continue stirring for about 15 minutes.
  • Simmer uncovered until meat is tender and add tamarind liquid, stir well and simmer until liquid is almost dry.
  • Add thick coconut milk, stirring constantly and allow to simmer again until oil separates from gravy and curry is dry.
  • Serve with white hot rice.
