Indonesian food is unquestionably some of the most delicious in the world. There isn't much subtlety about it, but what a great awakening for your taste bud. This doesn't mean that every dish is hot and pungent, but there's always a combination of sweet, sour and salty taste.

Rice is always the foundation of an Indonesian meal. With rice it is customary to serve fish curry and a poultry  or meat curry, or both or more vegetable dishes. The word "sambal" implies something fried with lots of chilies. It doesn't only include high powdered condiments such as sambal ulek or sambal bajak, which is basically pastes of ground chili and other seasoning.

It is quite polite to eat an Indonesian meal with one's fingers as most Indonesian do. There's quite an art to doing it properly. Only tips of the fingers of the right hand are used. Fingerbowls are provided, with slices of lemon or lime floating in hot water.

Indonesian and Malaysian recipes have much resemblance.  Basic ingredients may be the same, but the method of cooking and accompanying dishes changes with each country's own tastes and special produce.
