vegetable oil
lemon grass
shallots, chopped
garlic, chopped
fresh ginger, chopped
ground coriander
ground turmeric
bay leaves
coconut milk
brown sugar
chopped roasted cashew nuts
salt to taste |

METHOD |
- Heat frying pan over medium heat
and add vegetable oil. Add chicken and brown evenly. Remove and
drain excessive oil.
- Put lemon grass, shallots,
garlic, ginger and two tablespoons of water in a blender. Mix
well to a paste.
- Heat wok add oil and spice paste
and stir or 2 minutes or till fragrant. Put in coriander,
turmeric, bay leaves and sir fry for another 1 minute.
Pour in coconut milk, chili sauce, sugar, nuts, salt and stir
fry evenly.
- Return chicken to wok and turn
in sauce. Cover wok and cook for 15 minutes, stirring and
turning chicken frequently until chicken is cooked. Add in bay
leaves.
- Serve hot with rice.
