A mixture of Malay, Chinese and Spanish, with a touch of American influence, is the combination that makes the food of Philippines and the people themselves the exotic blend of East and West that they are.

Lunch and dinner are both big meals in the Philippines, and among the well to do may include four or five courses - soup, fish meat, fresh fruits and finally sweet dessert. Between lunch and dinner there is yet another meal, "merienda", which can best be compared to an English high tea. It contains not only sandwiches and cakes and tea, but also on the table will be lumpia (spring roll), a dish of pancit (fried noodles) and at least a couple of sweets made from grated coconut, coconut milk, glutinous rice or pineapple or other tropical fruits.
