Chicken with Mushroom

INGREDIENTS

450g

boneless chicken tights

sunflower oil

button mushroom, sliced

spring onions, chopped

garlic, finely chopped

young ginger, peeled and finely chopped

chinese chicken stock

rice wine

dark soy sauce

oyster sauce

can straw mushrooms, drained

teaspoon corn flour with 2 tablespoon of cold water

 

 

METHOD
  • Mix in a bowl the stock, rice wine, soy sauce and oyster sauce and put aside.
  • Cut chicken into 2.5cm strips. Heat oil in a wok and stir-fry chicken strips for 3-4 minutes or until chicken is lightly browned all over.
  • Add sliced mushrooms, spring onions, garlic and ginger and stir-fry for 3 minutes. Stir in the bowl of stock and add in the straw mushrooms, corn flour mixture and simmer for 2 minutes.
  • Serve hot with rice or noodles.
