Chicken with Peanuts

INGREDIENTS

450g

1 tablespoon

boneless chicken breast

chili oil

fresh root ginger, crushed and chopped

skinned peanuts

chinese chicken stock (available in supermarket)

dry sherry

dark soy sauce

brown sugar

five-spice powder

white rice vinegar

spring onions finely chopped

 

 

 

METHOD
  • Remove skin and fat from chicken breast. Cut into 2.5 cm ( 1 in ) pieces.
  • Heat oil in a wok and gently stir fry chicken, ginger and peanuts for 3 minutes or until chicken is just colored.
  • Add stock, sherry, soy sauce, sugar, five spice powder and rice venigar and simmer for 5 minutes, stirring occasionally. Remove from heat and stir in spring onions.
  • Serve hot.
