Dried Chili Chicken with Cashew Nuts

chicken thighs, cut into pieces
ground oil
dried chili, chopped
fresh root ginger, crushed and chopped
cashew nuts
chinese chicken stock (available in supermarket)
dark soy sauce
brown sugar
white rice vinegar
spring onions finely chopped

METHOD |
- Heat oil in a large frying pan,
add chicken and fry stirring frequently until brown all over.
Remove chicken from pan.

Add ginger and
dried chili into pan and fry for 2 minutes or until fragrant.
Add stock, soy sauce, sugar, rice vinegar, chicken pieces and
cook for 3 minutes, stirring occasionally and add in spring
onions and cashew nuts.
- Serve hot.
