 Satay Gravy  with Peanuts

INGREDIENTS

180g

1 stalk

3 tablespoons

2 medium

2 cloves

2 teaspoons

1 tablespoon

1 tablespoon

2 tablespoons

1 teaspoon

 

 

roasted, skinned peanuts

lemon grass, sliced and crushed

peanut oil

onion, finely chopped

garlic, finely chopped

dried shrimp paste ( balachan)

dried tamarind

chili powder

sugar

salt

METHOD
  • In a bowl, soak tamarind in hot water, squeeze to dissolve and strain.
  • In a blender, and peanut and crush finely and set aside. In a same blender put 2 tablespoon of peanut oil in a blender and add lemon grass, garlic, onion and balachan and blend to a paste.
  • Heat remaining oil in a fry pan and stir fry the blended mixture over a low heat until cooked and add chili powder, sugar, salt, tamarind juice and grind peanuts.
  • Simmer for about 10 minutes while stirring until mixture thickened. Add some water if mixture thicken.
  • This sauce is best served with meat, cucumber and raw onions.
