Ginger Stir Fry Chicken With Oyster Sauce

INGREDIENTS

450g

1 tablespoon

1 clove

5 cm

1 teaspoon

1 tablespoons

1 teaspoons

2 teaspoons

1 tablespoon 

 

lean minced chicken

sunflower oil

garlic, finely chopped

fresh root young ginger, peeled and finely chopped

chicken stock

rice wine

dark soy sauce

oyster sauce

corn flour mixed with 2 tablespoons of water

chopped spring onions

 

METHOD
  • Trim fat from chicken. Cut chicken into strips. Heat oil in a wok and gently stir-fry ginger till fragrant. Add in garlic and chicken and stir for another 3-4 minutes or until chicken is browned all over.
  • Add in the chicken stock, rice wine, dark soy sauce, corn flour mixture and oyster sauce and simmer for 2 minutes
  • Garnish with spring onions and serve hot with rice.
