Fried Okra with Shrimp
/ Prawns in Chili Sauce

INGREDIENTS |

fresh okra, sliced in stripes
fresh shrimps / prawns
dried shrimps
shrimp paste
chilies, seeded and finely chopped
garlic, chopped
shallots, finely chopped
vegetable oil

METHOD |
- Raw peeled prawns cut in half
lengthways and discard vein. Wash and soak dried shrimp and
discard any shell.
- In a wok heat oil and stir fry
okra for 5 minutes, remove and set aside.
- Using a pestle and mortar or
small blender, pound or mix together dried shrimps, chilies,
shallots, shrimp paste and dried shrimps until paste. In a
wok, heat oil, add paste and stir fry for few minutes until
fragrant.
- Put shrimp in wok and stir fry
for 1 minutes or until shrimp turns orange and add in the stir
fried okra.
- Stirring occasionally for 2-3
minutes until okra is tender.
- Remove and serve with white
rice.
