Chicken Asparagus Soup

INGREDIENTS

2 spring onions

 

fresh asparagus

chinese chicken stock (available in supermarket)

light soy sauce

dry sherry

brown sugar

dry sherry

dark soy sauce

brown sugar

rice vermicelli

leaned cooked chicken, finely shredded

finely chopped, to garnish

fresh ginger peeled and chopped

a pinch of salt and white pepper

 

 

METHOD
  • Trim ends from asparagus spears and slice spears into 2.5 cm pieces.
  • Pour stock into large saucepan along soy sauce and sherry. Stir in brown sugar.
  • Bring to boil and add asparagus and noodles. Simmer and covered fro 5 minutes.
  • Stir in chopped ginger and shredded chicken and season with salt and pepper. Simmer for 4 minutes to heat through. Garnish with chopped spring onions and serve.
