- Wash chicken and place chicken
in a large bowl. Add in ginger garlic, spring onions, salt and
pepper. Add 1 1/2 liters of water in a bowl and bring it to
boil, skimming away surface scum with a spoon.
- Reduce heat, cover and simmer
for 2 hours. Leave it to cool.
- Ladle stock and discard chicken
and vegetables. Skim away any fat that form on surface.
- Store in jug and freeze
for later use.
