Crab Meat with Sweet Corn Soup

INGREDIENTS

crab meat

small sweetcorn

fresh root ginger

clove garlic

chinese rice wine

light soy sauce

chicken stock, cube available in hypermarket

cornflour mixed with 2 tablespoons water

spring onion, shredded to garnish

a pinch of salt and white pepper

 

 

METHOD
  • In a wok bring water to boil, and add small sweetcorn and cook for 3 minutes or until sweetcorn softened and drain.
  • In a same wok mix together all the ingredients, chicken stock, ginger, garlic, crab meat, rice wine and soy sauce. Bring it to boil and add crab meat and simmer for 8 - 10 minutes.
  • Add cornflour mixture and season with salt and pepper, stirring until thickened.
  • Garnish with spring onions and serve hot.
