Hot and Sour Chicken Soup

INGREDIENTS

lean minced chicken

dried chinese mushrooms

preserved vegetables,sliced

clove garlic

rice vinegar

sugar

chicken stock mix with 1/2 cup of water

dark soy sauce

cornflour mixed with 3 tablespoons water

coriander leaves, chopped

spring onion, finely chopped

a pinch of salt and white pepper

METHOD
  • Soaked chinese mushrooms in water for half an hour.
  • Cook chicken in a pan of boiling water for 5 minutes, drain and set aside. Drain mushroom and squeeze out excess water and cut into slices.
  • In a saucepan, add chicken, mushrooms, vegetables, soy sauce, pepper, vinegar, stock and sugar and bring it to boil and simmer for 4 minutes.
  • Add cornflour mixture and season with salt and pepper, stirring until thickened.
  • Garnish with spring onions and coriander and serve hot.
