chicken stock mix with 1/2 cup of water
dark soy sauce
cornflour mixed with 3 tablespoons

- Soaked chinese mushrooms in
water for half an hour.
- Cook chicken in a pan of boiling
water for 5 minutes, drain and set aside. Drain mushroom and
squeeze out excess water and cut into slices.
- In a saucepan, add chicken,
mushrooms, vegetables, soy sauce, pepper, vinegar, stock and
sugar and bring it to boil and simmer for 4 minutes.
- Add cornflour mixture and season
with salt and pepper, stirring until thickened.
- Garnish with spring onions and
coriander and serve hot.
