In the West, soup is normally one of
several courses and is served at the start of a meal. This is
not in Asia, where soup is usually consumed as a one dish filler
between meals or as a side dish to a proper meal. It tends too
be a clear broth or stock, flavored with herbs and spices, meat,
fish or poultry. The following recipes are among the most
popular in Southeast Asia. In most cases the stock used is very
light, allowing the flavors of the herb and spices to infuse
into the soup.
