Fish head, wash well clean and trim
any spines
coconut milk
green curry paste
chicken stock
fish sauce
small green chili, sliced
chopped fresh basil
citrus leaves |

METHOD |
- After washing the fish head,
soak in a bowl of water to clear any spines. In a curry pot, add
in curry paste, stir fry and pour in coconut milk, bring to boil
stirring constantly.
- Add fish, reduce heat and simmer
with citrus leaves, chicken stock and fish sauce until fish is
cooked.
- Add chilies and fresh basil and
simmer for a minute.
- Serve with white rice.
