Green Curry Fish Head - Kaeng Khieu Wan Pla

INGREDIENTS

600g

Fish head, wash well clean and trim any spines

coconut milk

green curry paste

chicken stock

fish sauce

small green chili, sliced

chopped fresh basil

citrus leaves

 

METHOD
  • After washing the fish head, soak in a bowl of water to clear any spines. In a curry pot, add in curry paste, stir fry and pour in coconut milk, bring to boil stirring constantly.
  • Add fish, reduce heat and simmer with citrus leaves, chicken stock and fish sauce until fish is cooked.
  • Add chilies and fresh basil and simmer for a minute.
  • Serve with white rice.
