Thai Chili Fried Rice - Khao Phat Prik

pork, cut into cubes

prawns, shelled and de-veined

eggs, beaten

steamed rice

peanut oil

onions, finely chopped

fresh red chili, seeded and sliced

green chili, seeded and sliced

curry paste

garlic, crushed

chicken stock

spring onion, chopped

fish sauce

fresh coriander leaves

pepper and salt to taste

 

METHOD
  • Cook rice and spread it out to cool or leave it for overnight. In a bowl, season beaten eggs with chicken stock and pepper.

  • In a wok, heat oil and stir-fry onions and sliced chili until soft. Add curry paste, garlic and stir-fry until fragrant.  Add pork and fry until cook and add prawns. Stir fry till prawns turn pink and add rice and toss thoroughly. Pour the beaten egg into the wok and stir well. Continue toasting and stirring until rice is heated evenly.

  • Sprinkle fish sauce, spring onions and mix well.

  • Garnish with coriander leaves and serve.
