Thai Food is an original and rich amalgam of evocative aromas, blends of herbs and spices and contrasting textures and tastes and contains flavors and techniques that are familiar from Chinese, Indian and Japanese cooking. The dishes are light and fresh and characterized by flavors such as the citrus limes, spiked with clean pine notes, fresh coriander, coconut milk, garlic and chilies.

Rice is a very important part of the diet. As well as being foundation of many one course dishes, rice plays a vital supporting role for other dishes, and balances highly spiced ones. Thai dishes are created to be mixed and eaten with rice. Thai curries can be hot, though they are cooked quickly and do not have the rich heaviness that results from long, slow simmering.  Coconut milk is used to soften the pungency of the spices and combines flavors to give a sophisticated subtlety to the finished dishes.

Thailand has a long coast line and many inland rivers, which provide fish and shellfish, which are both ubiquitous and varied. Meat is considered more of a luxury and is often served by combining with vegetables, rice, noodles, fish or shellfish or plenty of coconut based sauce. Chicken and duck is popular particularly for special occasions. Vegetables are important and often cooked on their own and eaten as salad, either hot or cold or simply served with "Nam Prik".
