Asian Recipe from Vietnam - Chicken In Cellophane Noodles

INGREDIENTS

chicken thighs

cellophane noodles

dried mushrooms

peanut oil

light soy sauce

garlic, crushed

chicken stock

pepper

spring onion, chopped

onions

fish sauce

 

METHOD
  • Put the mushrooms in a bowl and sock in water for 1 hour. Discard the mushroom stems and cut into half. Cut spring onions into slices and put aside.
  • Remove bone from chicken thighs and cut into bite size chunks. In a large bowl of boiling water, dip the noodle in and stand for 8 minutes.
  • Heat a frying pan, add oil, garlic, chicken and onions, stir fry for 3 minutes. Add 1/2 cup water, fish sauce, pepper, soy sauce, chicken stock and bring to boil and simmer for 2 minutes.
  • Add noodles and cook for 2 minutes, stirring constantly.
  • Serve hot.
