INGREDIENTS |

cellophane noodles

mushrooms
peanut oil
light soy sauce
garlic, crushed
chicken
stock
pepper
spring onion, chopped
onions
fish sauce

METHOD |
- Put the mushrooms in a bowl and
sock in water for 1 hour. Discard the mushroom stems and cut
into half. Cut spring onions into slices and put aside.
- Remove bone from chicken thighs
and cut into bite size chunks. In a large bowl of boiling water,
dip the noodle in and stand for 8 minutes.
- Heat a frying pan, add oil,
garlic, chicken and onions, stir fry for 3 minutes. Add 1/2 cup
water, fish sauce, pepper, soy sauce, chicken stock and bring to
boil and simmer for 2 minutes.
- Add noodles and cook for 2
minutes, stirring constantly.
- Serve hot.
