Squid Stuffed with
Pork - Muc Don Thit

INGREDIENTS |

squid, clean discard the head and everything inside the body
minced pork
dried
mushrooms
garlic, crushed
chicken
stock
pepper
spring onion, chopped
fish sauce

METHOD |
- Put the mushrooms in a bowl and
soak in water for 1 hour. Discard the mushroom stems and chop
finely. Wash inside the squid and rub off skin. Chopped
tentacle finely and put aside.
- Season minced pork in a bowl
with chopped tentacle, mushroom, crushed garlic, spring onions,
chicken stock, pepper and fish sauce. Mix well and let it
marinate for 20 minutes. Stir fry the pork mixture for 2 minutes
and set aside to cool.
- Stuff pork into squid, packing
firmly. Heat some oil in a wok and stir-fry for 8-12 or till the
squids are cooked.
- Cut in thin slices, arrange and
serve with chili sauce.
